1/4 cup white wine vinegar
1/4 cup extra-virgin olive oil
1/4 teaspoon garlic powder
2 seedless cucumbers, partially peeled, then sliced
1 large heirloom tomato, chopped
1 small yellow onion, sliced
1 ripe Hass avocado, chopped
Sea salt and ground black pepper
1. Combine the vinegar, olive oil and garlic powder and set aside
2. In a large bowl place the cucumbers, tomato, onion and avocado.
3. Pour the oil and vinegar mixture over the veggies and mix well, but gently, adding sea salt to taste.

Pumpkin Spice Shakeology Balls
Makes about 12 servings, 2 balls each
3/4 cup all-natural smooth almond butter
1/4 cup pure pumpkin puree
1/4 cup raw honey
3/4 cup dry old fashioned rolled oats
3 scoops Vanilla Shakeology
1 tsp. pumpkin spice
1. Combine almond butter, pumpkin, honey, oats, Shakeology, and pumpkin pie spice in a medium bowl; mix well with clean hands or a rubber spatula.
2. Shape mixture into twenty four walnut size balls; place in airtight container.
3. Refrigerate for at least 1 hour before serving.

Black Bean Hummus
1 (15-oz) can black beans, drained, rinsed (reserve liquid)
1/4 cup low sodium organic vegetable broth
3 Tbsp. tahini (sesame butter)
3 cloves garlic, coarsely chopped
2 Tbsp fresh lemon juice
Sea salt (or Himalayan salt) (optional)
1. Place beans, broth, tahini, garlic, and lemon juice in food processor (or blender).
2. Pulse until smooth.
If hummus is too thick add 1 Tbsp reserved liquid at a time until hummus is desired consistency.
3. Season salt and cayenne pepper if desired.
4. Refrigerate 1-2 hours to allow the flavors to blend
Zucchini Cashew Soup
1 oz. raw cashews (17 cashews)
1.5 cups water, divided
1.5 medium zucchini, cut into chunks
Himalayan sea salt (or Bragg Liquid Aminos to taste)
Herbal Seasoning blend to taste (or fresh herbs like basil or dill)
Mix well in a good blender and warm up if needed
